crock pot sesame chicken

1 1/2 pound boneless/skinless chicken breasts
1/2 cup honey
1/4 cup soy sauce
2 tablespoons dried onion
2 tablespoons ketchup
1 tablespoon oil
1/2 teaspoon garlic powder
2 teaspoons cornstarch dissolved in 3 Tablespoons water
Sesame seeds
Put chicken into crock pot.
Combine honey, soy sauce, onion, ketchup, oil, and garlic. Pour over chicken.
Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through.
Remove chicken from crock pot, leave sauce.
Dissolve 2 teaspoons of cornstarch in 3 tablespoons of water and pour into crock pot. Stir to combine with sauce. Replace lid and cook sauce on high for ten more minutes or until slightly thickened.
Cut chicken into bite size pieces and return to crock pot - can leave chicken in and simmer on low or serve.
Sprinkle with sesame seeds and serve over rice.

Alternate suggestion: Too long a process for chick breasts.. Cube the raw breasts...mix the sauce ingredients.....cook chicken in skillet for ten minutes.....pour the sauce. over the Chicken. include perhaps a little pineapple juice and the cornstarch . Cook till thicken and garnish with green onion and sesame seeds. Voila...15 minutes done from scratch.

Another idea: leave out the sesame seeds and add orange juice - now you've got orange chicken!

Mint Sandwich Cookies

Serves: 24
Ingredients
  • 1 (15.25 ounce) box Devils food cake mix
  • ½ cup oil
  • 2 eggs
  • ½ cup chopped Mint Sandwich Chocolates (like Andes Chocolate mints)
  • 8 oz mint sandwich chocolates for melting on top
Instructions
  1. Preheat your oven to 350 degrees. In a large mixing bowl, combine cake mix, oil, and eggs together. Lastly, fold in the chopped mints.
  2. On a baking sheet, drop spoonfuls of the dough on top. Bake for 6 to 9 minutes.
  3. Remove from the oven and press a mint sandwich on top of cookie. Let sit for about 5 minutes and smooth the chocolate out like frosting. Enjoy!

Carmelitas

This is known as the best cookie ever! Baked with caramel and chocolate in the middle of an oat cookie crust.
Ingredients
  • 32 caramel squares, unwrapped
  • ½ cup heavy cream
  • ¾ cup butter, melted
  • ¾ cup brown sugar, packed
  • 1 cup flour
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • 6 ounces semisweet chocolate chips
Instructions
  1. Preheat oven to 350. Grease an 8×8 pan or you can line with aluminum foil or parchment paper for easier removal. The caramel can get sticky. (can also be made in a 9×13 just double the ingredients)
  2. In a mixing bowl, combine melted butter and brown sugar. Add flour, oats, and baking soda. Mix until combined.
  3. Divide the cookie mixture in half and pat half of the mix into the bottom of the 8×8 pan. Bake for 10 minutes and remove.
  4. While baking, combine the caramels and heavy cream and stir until completely smooth. Can also be melted in the microwave, just stir after every 30 seconds being careful not to let it burn.
  5. Remove pan from the oven and sprinkle chocolate chips over the crust. Pour caramel mixture over the chocolate chips and crumble remaining cookie dough on top.
  6. Return to oven and bake for 15-20 minutes until the edges are lightly brown.
  7. Once removed from oven allow them to completely cool and the caramel to set up. The caramel is like molten caramel right out of the oven and you want to let it cool. You can speed up the cooling process by putting it in the fridge if needed.

Crisp Cucumber Salsa

This is another Great one for Summer!!
Note: 1/4 cup is only 16 calories! YES ONLY 16 Calories!!!
2 cups finely chopped seeded peeled cucumber
1/2 cup finely chopped seeded tomato
1/4 cup chopped red onion
2 Tbsp minced fresh parsley
1 jalepeno pepper, seeded and chopped
4-1/2 tsp minced fresh cilantro
1 garlic clove, minced or pressed
1/4 c reduced-fat sour cream
1-1/2 tsp lemon juice
1-1/2 tsp lime juice
1/4 tsp ground cumin
1/4 tsp seasoned salt
Tortilla chips
In a small bowl, combine the first seven ingredients. In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt. Pour over cucumber mixture and toss gently to coat. Serve immediately with chips.

Berry Cheesecake Pudding Salad

(Recipe source: Gourmified)
Ingredients:
2 small boxes of instant cheesecake pudding (white chocolate pudding also works)
1 (32 oz) container of low fat strawberry yogurt
1 (16 oz) container of light Cool-Whip
16 oz. frozen mixed berries, partially thawed
3 large fresh bananas, sliced
1 lb. fresh strawberries, sliced
Directions:
Pour yogurt into a large bowl and mix in pudding (it will be kind of lumpy). Fold in the Cool-Whip (the lumps will go away as you stir it). Add all of the fruit and stir to combine. Keep refrigerated.

BROWNIE REFRIGERATOR CAKE

Ingredients:
1 box brownie mix
1 extra large egg
1 (8 oz.) package cream cheese, softened
1 cup powdered sugar
2 (8 oz.) containers whipped topping
1 (3 oz.) package instant chocolate pudding
1 (3 oz.) package instant vanilla pudding
3 1/2 cups milk
1 Hershey candy bar or chocolate syrup
Directions: Mix brownie mixes according to directions. Add egg. Bake in brownie pan. Mix cream cheese, powdered sugar and 1 container whipped topping. Put this mix on top of the cooled brownies. Blend puddings and milk together and put on top of the cream cheese mixture. Top with another layer of whipped topping. Put chocolate shavings or chocolate syrup on top. Refrigerate until ready to serve.

Cinnamon Roll Pancakes

Pancakes:
4 cups all-purpose flour
8 tsps baking powder
2 tsp. salt
4 cups milk
4 tbsps vegetable oil
4 large eggs, lightly beaten
Cinnamon Filling
1 cup butter, melted
1 1/2 cup brown sugar, packed
2 tbsp ground cinnamon
Cream Cheese Glaze
1/2 cup butter
4 oz. cream cheese
1 1/2 cups powdered sugar
1 tsp. vanilla
To make the Cinnamon Filling: Mix the three ingredients together. Place in a disposable piping bag and snip the end off or put in a Ziploc bag and snip the corner off.
To make the Pancakes: Mix the dry ingredients in one bowl and the wet ingredients in another bowl. Stir them together until everything is moistened leaving a few lumps.
Heat your griddle to exactly 325 degrees. You don't want these too cook too quickly, and you won't want your cinnamon to burn.
Make desired size pancake on greased griddle and then using the piping bag and starting at the center of the pancake, create a cinnamon swirl. Wait until the pancake has lots of bubble before you try to turn it. You will find that when you turn it the cinnamon swirl will melt. The cinnamon will melt out and create the craters which the cream cheese glaze will fill.
To make the Cream Cheese Glaze: In a microwave safe bowl melt the butter and cream cheese and then stir together. Whisk in the powdered sugar and vanilla. Add a little milk if needed to make it a glaze consistency.
Place pancake on plate, then cover with cream cheese glaze.

light ranch salad dressing


This whole jar of ranch is only 1.75 grams of fat and 255 calories!
1 cup dannon oikos plain greek yogurt
1 packet hidden valley ranch mix,
1/2 cup 1% milk.
Whisk together, pour into an air tight mason jar, chill 1 hour before use. Perfect consistency and tastes better than bottled!

zucchini and tomatoes

SIMPLE EASY SIDE DISH...
Slice the zucchini in half. Slice off the bottom to keep in stable. Brush with olive oil and top with garlic or garlic powder. Top with sliced tomatoes, salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend.. Bake 375 for 20 to 30 minutes until soft.

Peanut Butter Chocolate Chip Cookie Dough Bites


NO FLOUR, NO OIL, NO WHITE SUGAR (if only it had no calories!)
Ingredients:
1 1/4 cups canned* chickpeas, well-rinsed and patted dry with a paper towel
2 teaspoons vanilla extract
1/2 cup + 2 tablespoons (165 grams) natural peanut butter (can use PB2 from gym to make healthier, check your labels)
1/4 cup (80 grams) honey (agave would be amazing too!)
1 teaspoon baking powder**
a pinch of salt if your peanut butter doesn’t have salt in it
1/2 cup (90 grams) chocolate chips
* My can was a 400 gram can, 240 grams without the water, and I used all but a few tablespoons
** If you need grain-free baking powder, you can use 1 part cream of tartar + 1 part baking soda + 2 parts arrowroot.

Note: I don't have chickpeas, but I bet I could use ground white beans!

homemade bubbles


Bubble solution:
12 cups of water
1 cup of dish soap
1 cup of cornstarch
2 Tbsp baking powder

Toscana soup

you can omit the red pepper flakes.

Oven-Baked Zucchini Fries


makes approximately 8 servings
Ingredients
3 zucchini (1 lb.)
1/4 cup Grated Parmesan Cheese
1 packet Shake & Bake Coating Mix
1 small egg
Method
Heat oven to 450ºF.
Trim the zucchini -cut crosswise in half, then cut each piece into 1/4-inch sticks. Add cheese to coating mix in shaker bag; shake gently to combine.
Whisk egg in medium bowl. Add zucchini; toss to coat. Use tongs to place 1/4 of the zucchini in shaker bag; close bag and shake to evenly coat. Spread onto baking sheet sprayed with cooking spray. Repeat with remaining zucchini.
Bake for 12 to 13 min. or until golden brown, turning the baking tray 180 degrees after 7 min to facilitate even baking. Meanwhile, mix remaining ingredients.

Microwave popcorn, no bags, no butter, no oil!!!!

It’s genius really. Simple, simple genius.

Glass bowl + ceramic plate + popcorn kernels = perfectly popped popcorn in the microwave.

No bag. No butter or oil. Nothing to throw away afterward. And even no un-popped kernels.

This is life-changing.

Stay with me now.

Take 1/4 cup of dry popcorn kernels and place in the bottom of a microwave-safe glass bowl (pyrex is a great choice). Place a microwave-safe plate on top of the bowl. Plate should be wide enough to go beyond the rim of the bowl.

Microwave for 2 minutes 45 seconds. Watch in glory as your popcorn pops perfectly into little puffs of heaven.

skinny shake

Have you tried the SKINNY SHAKE before, it tastes like a Wendy's frosty:

3/4 cup Almond Milk
about 15 ice cubes
1/2 tsp Vanilla
1-2 Tbsp unsweetened Cocoa powder
1/3 of a Banana
Blend.

Pineapple-lime jell-O

Pour out liquid from a can of sliced pineapple and discard.
Dissolve a 3oz. box of sugar free lime Jello in 1 cup boiling water (you could also use the pineapple juice and water to equal 1 cup liquid)
Pour hot Jello water over pineapple rings in the can.
Chill until set. Run hot water on the sides and bottom of can to loosen. Then cut the bottom of the can and push the mold out. Cut between pineapple slices and serve.
*Optional: top with cottage cheese or a dollop of whipped cream.
*You could also do this with other canned fruit and flavors of Jello, but you would lose the nifty pineapple ring effect....

Vanilla French Toast


4 eggs, lightly beaten
1 cup half-and-half or light cream
2 tablespoons sugar
2 teaspoons vanilla
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
8 slicesdry white or whole wheat bread
2 tablespoons butter or vegetable oil
Maple-flavored syrup
Sliced bananas (optional)

In a shallow bowl, beat together eggs, half-and-half, sugar, vanilla, cinnamon and nutmeg. Dip bread slices into egg mixture, coating both sides.

In a very large skillet or on a griddle, melt 1 tablespoon of the butter over medium heat. Add half of the bread slices and cook for 4 to 6 minutes or until golden, turning once. Repeat with remaining bread slices and the remaining butter. Serve with maple syrup and sliced bananas.

Martha Washington Pie


1/4 cup corn syrup 
2 tablespoons sugar 
1 tablespoon butter 
3 cups Cocoa Rice Krispies® cereal 
1 (8-ounce) package cream cheese softened
1 (15-ounce) can sweetened condensed milk
1/3 cup lemon juice
1 teaspoon vanilla
1 (1 pound 5-ounce) can cherry pie filling

Combine corn syrup, sugar, and butter in 2-quart saucepan. Cook over low heat, stirring occasionally, until mixture begins to bubble. Remove from heat. Add Kellogg's Rice Krispies® cereal. Stir until well coated. Press mixture evenly and firmly around sides and in bottom of buttered 9-inch pie pan to form crust. Chill.

Place cream cheese in mixing bowl; beat until fluffy. Gradually add sweetened condensed milk; mix thoroughly. Stir in lemon juice and vanilla. Pour into chilled pie crust. Refrigerate 1 hour; spread cherry pie filling evenly over cream cheese filling. Return to refrigerator about 1 hour or until thoroughly chilled. Cut into wedges to serve.

Quick Cinnamon Roll Cake


1 (18 1/4 ounce) box yellow cake mix 
4 eggs
3/4 cup oil 
1 cup sour cream
1 cup brown sugar
1 tablespoon cinnamon
2 cups powdered sugar
4 tablespoons milk

Preheat oven to 325 degrees. Grease a 9 x 13 inch baking pan.
Mix together cake mix, eggs, oil and sour cream. Pour into prepared baking pan.

In a separate bowl combine brown sugar and cinnamon. Sprinkle evenly over cake batter then swirl into batter with a knife. The more you swirl, the more combined it will be so don't over-swirl otherwise the cinnamon/sugar will not be swirly. Bake for 40 minutes.

For icing, combine milk with powdered sugar and mix thoroughly. Pour over slightly cooled (10-15 minutes on cooling rack) cake.

how to keep strawberries fresh


To keep the strawberries fresh longer in the refrigerator, use 1 Part White Vinegar to 10 Parts Water. Soak the strawberries, leaves and all in the vinegar/water mixture for a few minutes. Then drain the strawberries in a colander until they are completely dry.

Then place strawberries in an uncovered bowl in the refrigerator. The vinegar/water mixture kills any mold spores on the strawberries and keeps them fresh longer. The vinegar does not affect the taste. This also works for all kinds of berries: blueberries, raspberries, blackberries, etc. It really works!!”

Vanilla Cake with Strawberry Cream Frosting

Frosting -
2 (8-oz) packages of cream cheese, room temperature
1 cup (2 sticks) unsalted butter, room temperature
4 cups powdered sugar
½ cup seedless strawberry jam
¾ cup chilled heavy whipping cream
Cake -
3 cups cake flour
¾ tsp salt
½ tsp baking powder
½ tsp baking soda
3 cups sugar
1 cup (2 sticks) unsalted butter, room temperature
7 large eggs
2 tablespoons vanilla extract
1 cup sour cream
6 tablespoons plus ⅓ cup seedless strawberry jam
2 lbs strawberries, hulled, sliced (about 6 cups), divided
FROSTING: Put a small/medium bowl in the freezer to chill. In a separate large mixing bowl, beat cream cheese and butter until smooth. Beat in sugar, then jam. Remove that chilled bowl from the freezer and beat cream in that chilled bowl until peaks form. Fold whipped cream into frosting. Cover; chill for a couple of hours until it’s firm enough to spread. (If you are in a hurry, you could put the frosting in the freezer to chill quickly.)
CAKE: Preheat the oven to 325 degrees F. Butter and flour two 9-inch cake pans with 2-inch high sides. In a medium bowl, whisk together flour, salt, baking powder, and baking soda. In a large bowl, cream butter and sugar together until light and fluffy. Add eggs, one at a time, beating after each addition. Beat in vanilla. Add sour cream, and beat for 30 seconds. Add flour mixture in three additions, beating to blend after each addition. Divide batter into prepared pans.
Bake cake until a toothpick inserted into the center comes out clean, 50-60 minutes. Remove from oven and cool for 10 minutes. Run a sharp knife around the edges of the pans, then turn cakes out onto a rack to cool completely. I threw the two cake layers in the freezer for about an hour to make the cake assembly easier. Using a serrated knife, divide each layer in half horizontally. Place one half, cake side down, on a cake plate.
Spread 3 tablespoons of strawberry jam over the cake, then spread ¾ c of the frosting over the jam. Arrange ¾ cups of the sliced strawberries on top of the frosting in a single layer. Repeat two more times with cake layer, jam, frosting, and strawberries.
Top with remaining cake layer, cut side down. Spread two cups of frosting over the top and sides of the cake in a thin layer, then frost with remaining frosting. Stir remaining jam to loosen, then spoon teaspoonfuls onto the top and sides of the cake. Use the back of a spoon to swirl jam decoratively into the frosting.

PIZZA BALLS


Ingredients:
3 cans Pillsbury Buttermilk Biscuits (10 ct)
60 pepperoni slices (2 per biscuit)
Block of cheese (Colby/Monterey Jack or Chedder)
1 beaten egg
Parmesan Cheese
Italian Seasoning
Garlic Powder
1 jar pizza sauce
Directions:
Slice cheese into approx. 28 squares. Flatten each biscuit and stack pepperoni and cheese on top (Like in the picture) Gather edges of biscuit and secure on top of the roll. Line rolls in greased 9x13 pan Brush with beaten egg. Sprinkle with parmesan cheese, Italian seasoning and garlic powder. Bake at 425 degrees F. for 18 to 20 mins. Serve with warm pizza sauce for dipping. ENJOY!!

sweet Hawaiian crock-pot chicken


Sweet Hawaiian Crockpot Chicken:
Ingredients:
1 cup pineapple juice
1/2 cup packed brown sugar
1/3 cup light soy sauce
2 pounds chicken breast tenderloins.
Directions:
Add all ingredients to the crockpot and cook on low 6-8 hrs and they should just fall apart. Enjoy!

buckeyes


1 1/2 cups Jif Creamy Peanut Butter
1/2 cup butter, softened
1 teaspoon vanilla extract
1/2 teaspoon salt
3 -4 cups powdered sugar
2 cups semi-sweet chocolate chips
2 tablespoons Crisco All-Vegetable Shortening
COMBINE peanut butter, butter, vanilla and salt in large bowl. Beat with an electric mixer on LOW until blended. Add 2 cups powdered sugar, beating until blended. Beat in additional powdered sugar until mixture, when shaped into a ball, will stay on a toothpick. Shape into 1-inch balls. Refrigerate.
PLACE chocolate chips and shortening in microwave-safe bowl. Microwave on MEDIUM for 30 seconds. Stir. Repeat until mixture is smooth. Reheat as needed while coating peanut butter balls.
INSERT toothpick in peanut butter ball. Dip 3/4 of ball into chocolate, leaving top uncovered to resemble a buckeye. Remove excess. Place on wax paper-lined tray. Remove toothpick. Smooth over holes. Refrigerate until firm.

Make your own Ranch, Dry Onion Soup Mix and Taco Seasoning

This is soooo much HEALTHIER than those you buy at the store!! They contain a TON of stuff that is not good for you!!  Just mix and store in small mason jars.

Taco Seasoning:
1/2 cup chili powder
1/4 cup onion powder
1/8 cup ground cumin
1 tablespoon garlic powder
1 tablespoon paprika
1 tablespoon sea salt
Put ingredients into a jar and shake.

Dry Onion Soup Mix:
2/3 cup dried, minced onion
3 teaspoons parsley flakes
2 teaspoons onion powder
2 teaspoons turmeric
1 teaspoon celery salt
1 teaspoon sea salt
1 teaspoon sugar
1/2 teaspoon ground pepper
Mix all ingredients in a jar, then give the jar a good shake. I’d recommend shaking the jar to mix the ingredients well before each use.
Use 4 tablespoons in a recipe in place of 1 packet of onion soup mix. Store this in a dry, cool place.

Ranch:
5 tablespoons dried minced onions
7 teaspoons parsley flakes
4 teaspoons salt
1 teaspoon garlic powder
Mix together and store in an air tight container.
For dressing: Mix 2 tablespoons dry mix with 1 cup mayonnaise and 1 cup buttermilk or sour cream.
For dip: Mix 2 tablespoons dry mix with 2 cups sour cream.
Mix up a few hours before serving, so the flavors all blend.

Brownie Mixes (30 cents each)

So simple, so easy. Not just frugal but cuts out the unknown ingredients.
1 Cup Sugar, 1/2 Cup All-Purpose Flour, 1/3 Cup Cocoa, 1/4 tsp Salt, 1/4 tsp Baking Powder. 

Put mix in plastic bags or mason jars.
At Baking Time Add: 2 Eggs, 1/2 Cup Vegetable Oil, 1 teaspoon Vanilla.
Bake @ 350 degrees for 20-25 minutes in an 8x8 or 9x9 pan.

crackin' the bread twisties code


When you go to buy bread in the grocery store, have you ever wondered which is the freshest, so you 'squeeze' for freshness or softness? Did you know that bread is delivered fresh to the stores five days a week? Monday, Tuesday, Thursday, Friday and Saturday. Each day has a different color twist tie.
They are:

Monday = Blue,
Tuesday = Green,
Thursday = Red
Friday = White
Saturday = Yellow.

So if today was Thursday, you would want red twist tie; not white which is Fridays (almost a week old)! The colors go alphabetically by color Blue- Green - Red - White - Yellow, Monday through Saturday. Very easy to remember. I thought this was interesting. I looked in the grocery store and the bread wrappers DO have different twist ties, and even the ones with the plastic clips have different colors. You learn something new everyday! Enjoy fresh bread when you buy bread with the right color on the day you are shopping.

Oven Baked Chow Mein Noodles (Hawaiian recipe)



1 lb. fresh chow mein noodles
½  TB sesame seed oil
½ TB vegetable oil
½ lb. prepared char siu pork, thinly sliced, slivers, divided
1 ( 8-9 oz) pkg. bean sprouts
1 small onion, thinly sliced
2 stalks celery, thinly sliced diagonally
4 stalks green onion., chopped, divided
1 medium carrot, peeled, thinly sliced, slivers
garnish: 1/4 c. thnily sliced slivers, char siu pork, chopped green onion 
Sauce:
2 TB oyster sauce
2 TB soy sauce
1 TB sugar
1 TB sesame seed oil
1tsp. salt


Cooking Process:
Preheat oven to 350 degrees. Line a 9x13-inch baking pan with aluminum foil. Grease bottom and sides of pan with vegetable and sesame seed oil. Set aside 1/4 cup of char siu and 2 tablespoons of chopped green onion for garnish. In a small mixing bowl; combine sauce ingredients. Reserve. In a mixing bowl, toss noodles and vegetables with sauce mixture. Transfer into prepared pan. Cover. Bake 20-25 minutes. 
how to serve:
For service: Top with reserved char siu and green onion. Serves 6-8.

Zucchini Parmesan Crisps


1 lb. zucchini or squash (about 2 medium-sized)
1/4 cup shredded parmesan (heaping)
1/4 cup Panko breadcrumbs (heaping)
... 1 tablespoon olive oil
1/4 teaspoon kosher salt
freshly ground pepper, to taste
Preheat oven to 400 degrees. Line two baking sheets with foil and spray lightly with vegetable spray.

Slice zucchini or squash into 1/4 inch-thick rounds. Toss rounds with oil, coating well.

In a wide bowl or plate, combine breadcrumbs, parmesan, salt and pepper.

Place rounds in parmesan-breadcrumb mixture, coating both sides of each round, pressing to adhere. The mixture will not completely cover each round, but provides a light coating on each side.

Place rounds in a single layer on baking sheets. Sprinkle any remaining breadcrumb mixture over the rounds.

Bake for about 22 to 27 minutes, until golden brown. (There is no need to flip them during baking -- they crisp up on both sides as is.)

Vegetable Tian



Vegetable Tian (thinly sliced veggies topped with cheese and then roasted)...
 
Ingredients:

1 Tbsp. olive oil
1 medium yellow onion
1 tsp. minced garlic
1 medium zucchini
1 medium yellow squash
1 medium potato
1 medium tomato
1 tsp. dried thyme
to taste salt & pepper
1 cup shredded Italian cheese

Directions:

STEP 1: Preheat the oven to 180 (400 degrees f) Finely dice the onion and mince the garlic. Sauté both in a skillet with olive oil until softened (about five minutes).

STEP 2: While the onion and garlic are sautéing, thinly slice the rest of the vegetables.

STEP 3: Spray the inside of an 8x8 square or round baking dish with non-stick spray. Spread the softened onion and garlic in the bottom of the dish. Place the thinly sliced vegetables in the baking dish vertically, in an alternating pattern. Sprinkle generously with salt, pepper, and thyme.

STEP 4: Cover the dish with foil and bake for 30 minutes. Remove the foil, top with cheese and bake for another 15-20 minutes or until the cheese is golden brown

Chicken and Biscuit Bake


A cross between chicken and dumplings and a pot pie. In any case, it's fabulously good and comes together in a convenient casserole!

3 cups (approx.) of cooked, shredded chicken (I used 2 breasts for this)
1 1/2 cups chicken stock or broth
1/4 cup (half of a stick) butter, melted
2 cups Bisquick
1 1/2 cups milk
1 can cream of chicken soup
1 1/2 cups frozen mixed veggies (allow to thaw for about 30 minutes before adding to recipe)
3 chicken bouillon cubes
Pepper

Directions:

Preheat oven to 350 degrees.

Warm chicken stock in a small sauce pan and add in the bouillon cubes to dissolve. Keep warm until ready to use.

Lightly coat with non-stick spray a 9 x 13 casserole dish or large, round casserole dish (mine was a 12" round). Pour in the melted butter.

Layer the shredded chicken on top of the butter.

Sprinkle on the veggies.

In a small mixing bowl, combine the milk and Bisquick. (It's okay if there are a few lumps remaining.)

Pour over the chicken and vegetables. DO NOT MIX!

Sprinkle on a little black pepper, if desired.

Combine the cream of chicken soup with the warmed stock in a small mixing bowl.

Once blended, slowly pour over the Bisquick layer. Again, DO NOT MIX!

(Yes, it'll looks like a big, soupy mess. Trust me ... this is what it's supposed to look like!)

If using a 9 x 13 pan, bake for 40 - 45 minutes or until casserole is set and top is brown and bubbly. If using a large, round dish (mine was 12"), bake for 50 - 55 minutes or until casserole is set and top is brown and bubbly.

Remove from oven and allow to rest for 5 minutes. Serve and enjoy!

Easter fruit baskets


Chocolate Chip Pudding Cookies


Yields 36 cookies

1 cup (2 sticks) Butter, softened
3/4 cup Brown Sugar
1/4 cup White Sugar
1 small pkg Instant Vanilla Pudding mix
2 eggs
1 teaspoon Vanilla Extract
2 1/4 cups All-Purpose Flour
1 teaspoon Baking Soda
1 pkg ( 12 oz) Milk Chocolate Chips


DIRECTIONS: Preheat oven to 375 degrees. Beat the butter, both sugars, pudding mix, eggs and vanilla in a large bowl. Beat until creamy and fluffy. Then slowly mix in flour and baking soda. Stir in chocolate chips.
Drop by tablespoonfuls, onto an ungreased cookie sheet. Bake for ONLY 9-10 minutes. Remove from oven and let cool about 10 minutes before eating.

Crock-Pot Chicken Teriyaki


Ingredients
1 lbs chicken, diced
1 cup chicken broth
½ cup teriyaki sauce
⅓ cup brown sugar
3 garlic cloves, minced
Directions

1. Combine chicken broth, teriyaki sauce, brown sugar and garlic cloves in large bowl.

2. Add chicken to sauce, and toss to combine.

3. Pour chicken mixture into crock-pot.

4. Cook on low 4-6 hours, or until chicken is cooked through.

5. Serve over hot cooked rice and spoon extra sauce if desired.

No bake lemonade pie

only 4 ingredients...and SOOO easy! (and creamy and cold...perfect for those hot summer days!)

1 (6 ounce) can frozen lemonade
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container Cool Whip or whipped cream
1 graham cracker crust (I buy this all ready made)
Use mixer and mix all ingredients until fluffy. Pour into ready made crust. Refrigerate until firm. I let it set overnight. This can also be made with limeade too. Top with whipped cream or Cool Whip and garnish with lemons.
